The architecture decides.
The answer does not depend on whom you trust. It depends on where your data sits and how the path to it is built. Four decisions in the architecture — each with a consequence you can verify.
Only your data — nothing else
Ordinary business software stores hundreds of companies in one shared database, separated only by a small marker. If something goes wrong, one company suddenly sees another's data. On your server there is only your data — there simply are no other records that could slip through.
No big pot worth cracking
Large cloud providers gather thousands of companies in one place — which makes them a worthwhile target: one break-in hits everyone at once. Your server sits on its own in your building and simply isn't an interesting target for attackers.
Sign-in without outside services
The security code when you log in is created directly between your phone and your server — with no outside provider in between that could fail or be hacked. Nobody but you is part of your sign-in.
The software checks itself
At setup, every program file gets a kind of digital fingerprint. At every start the system checks itself. If anything was changed in secret, you see it right away in the cockpit — you don't have to trust anyone, you can verify it yourself.
